- 1 kg very finely ground chicken
- To prepare the popcorn chicken marinade:
- 2 eggs
- 1 cup milk
- 2 tablespoons mayonnaise
- 1 tablespoon mustard
- Zest of 1 lemon
- 1 tablespoon hot sauce or chili, as desired
- 1 tablespoon garlic powder
- A pinch of ground cardamom
- A pinch of ground ginger
- A pinch of paprika or ground red pepper
- A pinch of nutmeg
- Salt to taste
- 1 cup flour
- 1 cup crushed cornflakes (fine)
Method
- Wash the chicken well, place it in a colander, and grind it very finely.
- Mix the marinade ingredients until you obtain a homogeneous sauce.
- Sprinkle a small pinch of salt over the ground chicken, form the ground chicken into balls, and place them in the marinade for at least one hour.
- Next, put plain flour or special crispy flour in a bowl depending on what you have available. Dip the popcorn balls in the flour and turn them to coat all sides completely.
- Fry the popcorn chicken in hot oil, but when you place the popcorn chicken balls lower the heat and fry them over low heat until cooked through.
