Ingredients:

1 kg very finely ground chicken

To prepare the popcorn chicken dipping sauce:

2 eggs

\r\n

1 cup milk

\r\n

2 tablespoons mayonnaise

\r\n

1 tablespoon mustard

\r\n

Grated zest of 1 lemon

\r\n

1 teaspoon hot sauce or chili to taste

\r\n

1 tablespoon garlic powder

\r\n

A pinch of ground cardamom

\r\n

A pinch of ground ginger

\r\n

A pinch of paprika or red pepper

\r\n

A pinch of nutmeg

\r\n

Salt to taste

\r\n

1 cup flour

\r\n

1 cup finely crushed cornflakes

\r\n \r\n

Preparation:

\r\n

Rinse the chicken well, place it in a sieve, and grind very finely.

\r\n

Whisk the chicken seasoning ingredients until well combined.

\r\n

Sprinkle a pinch of salt on the ground chicken, shape into discs, and soak in the sauce or marinade for at least an hour.

\r\n

Then place flour in a bowl (regular flour or crispy flour as available). Dip the popcorn chicken discs in the flour, turning to coat completely.

\r\n

Fry the popcorn chicken in hot oil, but when adding the pieces, reduce the heat and fry gently until cooked through.
