Homemade chicken escalope — a very tasty recipe.
Ingredients
- 1 kg boneless skinless chicken (fillets)
- Garlic powder
- Onion powder
- Poultry seasoning
- Cinnamon
- 6 garlic cloves
- 2 tablespoons grated Parmesan
- 2 eggs
- Milk (liquid)
- Mustard
- Crushed crackers or crushed corn flakes
- Flour
- 1 Maggi vegetable stock cube
- 2 tablespoons yogurt
- Note:
- If you use the Maggi cube, do not add extra salt, as the cube is already salty.

Method
- Wash the chicken well and cut it into wide, broad, somewhat thin slices, then wash the pieces with water and vinegar and drain them.
- Then rub them with a seasoning of spices, cinnamon, mustard and yogurt.
- Leave the chicken in the marinade for at least two hours.
- Prepare the coating: beat the eggs with mustard and milk... in another bowl place the flour, onion powder and garlic powder... in a third bowl mix crushed cake or coarsely crushed cornflakes with crushed garlic, a Maggi cube and Parmesan cheese.
- When preparing, coat the escalope slices in flour, then the beaten egg mixture, then the crushed cake/cornflakes mixture.
- Fry the escalope chicken in plenty of hot oil over medium heat or bake it in the oven with two tablespoons of olive oil.
