Plain and Date‑Filled Ghoraybeh — a delightful recipe for Eid hospitality
Ingredients
- 1 cup ghee (samin)
- 1 cup powdered sugar
- 2 cups all‑purpose flour + 2 tablespoons (see notes)
- Pinch of vanilla (optional)
- Date paste mixed with 1 tablespoon butter
- Shelled pistachios for garnish

Method
- Place the ghee in a bowl or mixer, add the sugar gradually and the vanilla, and whip until you get a smooth, cream‑like mixture.
- Add the flour and mix until the two cups are fully incorporated... if you notice the dough needs the two tablespoons, add them according to the type of flour.
- Refrigerate the mixture for half an hour.
- Begin cutting the dough into the size you want; shape it into fingers or roll it into rounds, place them on the baking tray, and press a pistachio on top to decorate the plain ghoraybeh.
- For the date‑filled ghoraybeh: cut a piece of dough, make a cavity in it and fill it with dates; then place a piece of kitchen plastic (cling film) in a maamoul mold, sprinkle some ground pistachio, place the filled ghoraybeh in the mold, press lightly, flip it out, and put it on the oven tray.
- Bake the ghoraybeh on the middle rack at 180°C for 15 minutes or only 12 minutes to achieve a successful ghoraybeh.Timers: 15 min, 12 min
- Remove them from the oven and let them cool completely before transferring them to another plate.
