Chicken noodle soup.... one of the tastiest and lightest soups.. easy, quick, and definitely delicious, especially with a side of rice!

Ingredients

  • Boiled chicken with spices
  • 1 liter chicken cooking stock
  • or
  • 1 liter water + 1 chicken bouillon cube
  • 1 tablespoon tomato paste
  • 1 potato
  • 1/3 cup vermicelli
  • Salt (can be omitted if using a bouillon cube)

Method

  1. Shred the boiled chicken or cut it into large pieces as desired, and place it in a pot with the stock (or water + bouillon cube)
  2. Add the tomato paste and let the water come to a boil
  3. Add the potato cubes and let the soup simmer over low heat
  4. When the potatoes are halfway cooked, add the vermicelli and salt
  5. Let the chicken noodle soup simmer over low heat until the potatoes are fully cooked, then serve
