Pumpkin and Leek Soup

Ingredients

- 2 tablespoons butter
- 1 medium onion, chopped
- 1 leek, chopped
- 2 potatoes, chopped into cubes
- 2 vegetable stock cubes
- Salt and ground black pepper to taste
- 4 cups of water
- 1 small pumpkin, peeled and cut into large cubes
- 450 ml cooking cream
Method

- Melt the butter over low heat, then add the onion and leek, and sauté them over medium heat for five minutes.
