Freekeh soup with meat, a homemade recipe that can’t be beat. Freekeh, or farik, is green wheat—this soup is super nourishing.
Ingredients
Start here, then move straight into the method.
- 1 cup freekeh, soaked for 1 hour in cold water, washed, and drained
- 200 g meat or chicken, or as desired
- 1 onion, chopped
- A pinch of black pepper
- Salt
- A pinch of cinnamon
- Ghee or oil

Method
Follow the cooking sequence without leaving the page.
- Put the meat in the pot and sauté it with the ghee a little.
- When the meat changes color on the outside, add the chopped onion and sauté until the onion softens.
- Add the freekeh and sauté it with the onion and meat, and also add the aromatics and spices.
- After the freekeh absorbs the ghee or oil, after a few minutes add about 1 liter of water and bring them to a boil.
- Reduce the heat and cover the pot until the meat and freekeh are fully cooked.
