Easy Tomato Soup
Easy tomato soup is one of our favorite soups, and we feel it is the best and tastiest accompaniment to any main dish! Delicious and easy—give it a try.
Ingredients
Start here, then move straight into the method.
- 6 to 7 ripe tomatoes
- 2 onions
- 1 cup crushed lentils
- Salt + black pepper
- 4 cloves garlic, crushed
- 1 tablespoon tomato paste
- 1/2 cup chopped fresh coriander

Method
Follow the cooking sequence without leaving the page.
- Wash the tomatoes, remove the skins, and cut them into medium-sized pieces.
- Place the chopped tomatoes in a blender and purée them.
- In a soup pot, heat a little oil and sauté the chopped onion.
- When the onion softens and turns golden, add the crushed garlic.
- Stir for a few minutes, then add the puréed tomato mixture.
- At this stage add 1 cup of washed split (cracked) lentils and let them simmer for a while with the tomato mixture.
- If you need some water, you can add it at this stage. Also add the tomato paste.
- Add salt, black pepper, and chopped fresh cilantro.
- Remove the tomato soup from the heat and serve hot, garnished with a little chopped fresh cilantro.
