Baked Ajaj Fish in the Oven

Ajaj fish.. one of the tastiest types of fish, and very reasonably priced.. it can be served fried, but it is especially delicious when baked
Ingredients
- Ajaj fish
- salt, vinegar, a sprinkle of flour, and lemon pieces for cleaning the fish
- Fish marinade:
- salt
- lemon juice
- olive oil
- ground cumin
- turmeric or safflower (for color)
- For stuffing the fish:
- lemon slices
- onion
- garlic
- carrot
- chopped cilantro
- green hot pepper - optional
- Aromatics:
- bay leaf
- cinnamon stick
- Vegetables:
- potato slices
- carrot slices
- onion
- tomato
Method
- First.... we start by cleaning the fish well.. scrape the fish on the outside with a knife and open each fish lengthwise from the middle, removing all impurities, then sprinkle a generous amount of salt, vinegar, and flour and rub the fish inside and out with lemon pieces.. then remove the black thread found on the main backbone
- Wash the fish well with water, then place them in a strainer for a sufficient time
- Prepare the fish marinade.. mix the salt, lemon juice, olive oil, cumin, and turmeric..
- Score the fish with a knife and soak them in the marinade, then place inside the fish and in the cuts made with the knife.. add lemon slices, onion, garlic, carrot, coriander, and hot green pepper
- Spread the bottom of the tray with potato slices, carrot, onion, and tomato, add a bay leaf and cinnamon sticks, and arrange the fish on top of the vegetables
- Cover the tray with aluminum foil, then place it in a hot oven at 180°C for 45 minutesTimers: 45 min
