- 1 large fish
- 1 bunch cilantro
- 2 cloves garlic
- 1 tbsp fish seasoning
- 2 lemons
- 1 large dry onion
- 1/2 kilo pumpkin, cut
- 2 large carrots, cut
- 1/2 kilo broccoli
- 1 cup mushrooms, cut
- Olive oil
- Salt
Method
- Crush the garlic and put it in a pan with a little oil until it softens, then add finely chopped cilantro and sauté briefly
- Place aluminum foil in the bottom of a baking tray and put in sliced onion and lemon rounds
- Season the cleaned fish with spices, salt, olive oil, and lemon, stuff it with a little garlic and cilantro, then secure it closed with small wooden skewers
- Place the fish on top of the onion and lemon slices, and add more on the other side as well so the fish won't stick to the foil when it cooks. Add 1/2 cup of water with the stuffed fish before sealing the aluminum foil
- Add 1 cup of hot water to the tray, and put it in the preheated oven for an hour or until cooked
- Boil the pumpkin, carrots, mushrooms, and broccoli, and serve them alongside the grilled fish. You can also serve boiled pasta and tartar sauce with it.
