Cold shrimp (prawn) salad... an appetizer that decorates the most elegant tables
Ingredients
- ½ kg cleaned shrimp, peeled
- 1 onion, diced
- 1 green and 1 red sweet bell pepper, diced
- 2 tablespoons chopped parsley
- ¼ cup white vinegar
- Salt (to taste)
- Juice of 1 lemon
- Olive oil
- 1 clove crushed garlic
- Sliced olives
- A pinch of pepper

Method
- Place a wide skillet over high heat and add the shrimp, garlic, and salt; stir until all the liquids evaporate, then set them aside and let them cool completely.
- In a bowl... put the chopped vegetables and the remaining ingredients and mix them; add the shrimp after it has cooled and toss until well combined and the shrimp absorb the vinegar and lemon juice.
- Refrigerate the salad so the flavors of the liquids concentrate in the shrimp.
