Cold shrimp (prawn) salad... an appetizer that decorates the most elegant tables

½ kg cleaned shrimp, peeled

1 onion, diced

1 green and 1 red sweet bell pepper, diced

2 tablespoons chopped parsley

¼ cup white vinegar

Salt (to taste)

Juice of 1 lemon

Olive oil

1 clove crushed garlic

Sliced olives

A pinch of pepper

Heat a large skillet over high heat. Add the shrimp, garlic and salt and stir until all the liquids have evaporated. Remove from heat and set aside to cool completely.
In a bowl, combine the chopped vegetables and the remaining ingredients and mix. Add the cooled shrimp and toss until well combined and the shrimp have absorbed the vinegar and lemon juice.
Refrigerate the salad so the flavors can concentrate and penetrate the shrimp.
