Green Spinach Salad with Cheese-Coated Grape Bites is an inventive, new salad recipe that is very delicious! It’s nice to try something different and experiment with new vegetarian recipes made from simple ingredients available in every home!
Ingredients
- 2 cups small fresh green spinach
- 1 cup large seedless white or red grapes
- 1/2 cup cream cheese mixed with spices and herbs
- 1/2 cup frozen soybeans
- 1/2 cup ground pistachios
- 2 tablespoons grated peeled almonds
- 2 tablespoons lemon juice
- A pinch of salt
- A pinch of black pepper
- 1 tablespoon olive oil
Method
- Wash the baby spinach leaves, dry them well, and arrange them on a large serving plate
- If herbed cheese is available, use it; otherwise mix any available cream cheese with a little garlic powder, a pinch of black pepper, and a pinch of ground rosemary
- Wash the grapes and dry them well, then roll them in a layer of cheese so they become completely coated
- After coating the grapes in cheese, roll them in another layer of crushed pistachios so the pistachios coat them as well
- Arrange the cheese-coated grapes over the spinach
- Sprinkle soybeans and peeled almonds over the spinach salad
- On the side, mix the dressing from lemon juice and olive oil with black pepper and salt
- Pour the dressing over the spinach and grape salad only at serving time to preserve the salad's fresh, crisp flavor
