Tuna and Chickpea Salad — this combination may seem unusual, but there’s no limit to how creative we get at Shou Tabkhin. A healthy, nutritious recipe.
Ingredients
- Half a medium onion, sliced into wedges
- 1 cup cooked chickpeas (about half a cooked batch or one can)
- 1 can or 1 cup tomatoes, halved
- 1 cucumber, sliced into rounds
- 2 radishes, sliced
- Half a red bell pepper, cut into wedges
- Arugula (rocket)
- 1/4 cup chopped parsley
- 1/4 cup feta cheese
- 3 small cans of tuna
- Dressing:
- 1/4 cup lemon juice
- 3 tablespoons olive oil
- 2 cloves garlic, crushed
- Salt
- Black pepper

Method
- Arrange the ingredients on a serving plate.
- In a small bowl combine the garlic, lemon juice, olive oil, salt and pepper; whisk well, pour over the salad and toss to combine.
