Ingredients

Start here, then move straight into the method.

  • Cookies
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter (soft, at room temperature)
  • 1/2 cup powdered sugar
  • 1/4 cup brown sugar - optional
  • 1 teaspoon vanilla
  • 2 tablespoons milk
  • 1/4 cup chocolate chips, chopped, or more to taste
  • 2 eggs
  • Vanilla and chocolate ice cream, prepared in advance for filling the cookies

Method

Follow the cooking sequence without leaving the page.

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.
  2. Mix the flour with the baking powder and salt in a bowl.
  3. Beat the butter with an electric mixer until creamy, then add the sugar, vanilla, and eggs, and beat for 2 minutes until the mixture is creamy and fluffy.

  4. Add the flour mixture and milk to the creamy mixture and mix, then add the chocolate chips and mix until cookie dough forms.
  5. Place the cookie dough in the refrigerator for 30 minutes until firm.
    Timers: 30 min
  6. After the time has passed, shape medium-sized balls from the cookie dough and place them on the tray with space between them.
  7. Bake in the hot oven for 12 to 15 minutes, until cooked through (do not overbake so they do not become hard).. The balls will spread and take the shape of cookies because of the oven heat.
    Timers: 15 min
  8. Let the cookies cool at room temperature for 10 minutes or more... then fill vanilla or chocolate ice cream between two cookies... continue until all is used up.
    Timers: 10 min
  9. Place the ice cream cookie sandwiches directly in the freezer so the ice cream does not melt, and leave them for 2 hours before serving.
    Timers: 120 min
