Ingredients

  • 1 cup basmati rice
  • 2 cups hot chicken cooking stock
  • 400 grams chicken breast
  • 1 onion
  • 2 garlic cloves, crushed
  • 2 carrots, cut into small cubes
  • 1 cup peas
  • Black pepper
  • Chicken stock seasoning
  • Yellow saffron seasoning or turmeric
  • Raisins
  • Nuts as desired / cashews - pistachios
  • A sprinkle of parsley for garnish

Method

  1. Boil the chicken with the aromatics until cooked through.
  2. In a pot over the heat, sauté the finely chopped onion with the crushed garlic until softened.
  3. Add the diced carrots and peas and sauté as well until softened.
  4. You can add the raisins at this stage, or leave them for garnish. Stir in the spices and salt as well.
  5. After a short while, add the chicken stock from the boiled chicken and let it come back to a boil before adding the washed and drained rice.
  6. When the stock boils and reaches the level of the rice, reduce the heat, cover the pot, and leave it for about 20 minutes until cooked.
    Timers: 20 min
  7. Fry the nuts separately with a little oil.
  8. Serve the yellow basmati rice on a serving platter and arrange the deboned chicken on top.
  9. Garnish with raisins, fried nuts, and a sprinkle of chopped parsley.
