  • Chicken pieces
  • Olive oil
  • Chicken seasoning
  • Black pepper
  • Cumin
  • Dried coriander
  • Ground cardamom
  • Salt
  • Chopped onion
  • Diced tomato
  • Peas
  • Chopped carrot
  • Corn
  • Chicken stock
  • Rice
  • Nuts for garnish

Method

  1. Fry the chicken pieces in a little olive oil until browned.
  2. Add the spices and salt, then remove the chicken from the pan.
  3. In the same pan, sauté the onion until softened, then add the tomato and stir.
  4. Add the remaining vegetables — sliced carrot, peas, and boiled or canned corn — and stir.
  5. Add the pre-made chicken broth according to the amount the rice will need.
  6. When the broth boils, add the rice and wait for the broth to return to a boil.
  7. Reduce the heat, cover the pot, and leave it on low heat long enough for the rice to cook.
  8. Spoon the vegetable rice onto a serving dish and arrange the browned chicken pieces on top.
  9. Garnish the rice with vegetables and chicken with fried nuts.
  10. Serve this dish with salad.
