Khubeiza with Fennel and Leeks

Khubeiza (mallow greens) is a healthy Lebanese dish with many benefits, popular with plant-based eaters. This recipe adds fennel and leeks; serve it with bread.

Khubeiza — a light, very nutritious plant-based dish. Khubeiza has many health benefits. Here is a delicious way to prepare it.

Ingredients

Start here, then move straight into the method.

  • khubeiza (mallow greens)
  • a bunch of fennel
  • 1 large leek, chopped
  • olive oil
  • 1 tablespoon hot pepper or chili paste (optional)
  • salt
  • 1 large onion, chopped
  • 1/2 cup coarse bulgur (or more, depending on the amount of khubeiza)

Method

Follow the cooking sequence without leaving the page.

  1. Wash the khubeiza well after chopping and leave it to drain.. do the same with the other vegetables
  2. In a pot or large saucepan, put the olive oil and add the onions and leeks and sauté until they brown
  3. Add the khubeiza, coarse bulgur and hot pepper and stir until the water evaporates and the khubeiza wilts
  4. Serve the khubeiza immediately or let it cool.. and serve it with bread
