Coconut and Semolina Dessert

A simple, quick dessert that takes no more than 10 minutes and uses ingredients found in every home... and best of all, it doesn’t require an oven :)

Ingredients

Start here, then move straight into the method.

  • 2 cups milk (reconstituted from powder + water)
  • 2 cups finely grated coconut
  • 1/2 cup sugar
  • 1/2 cup finely ground semolina
  • 1 tablespoon butter
  • 1 teaspoon vanilla powder
  • 1 1/2 tablespoons cocoa powder

Method

Follow the cooking sequence without leaving the page.

  1. In a pot over low heat, combine the milk, semolina, sugar, and vanilla, stirring continuously.
  2. Continue stirring until the mixture thickens, then add the butter and stir until well combined. Turn off the heat and add the coconut; mix well. Divide the dough into two equal parts: leave one plain and mix the other with cocoa powder.
  3. Leave both portions to cool completely. Once cooled, shape each type into long fingers and roll them in shredded coconut.
  4. Place the two colored fingers side by side and twist them together into a braided rope as shown in the accompanying photo. Cut them into small fingers and refrigerate until serving time.
