Rice Halva (Sweet Rice) with Qreishah

Ingredients

  • 1 cup rice flour
  • 2 cups water
  • 1 cup sugar
  • 500 g sweetened cheese or mozzarella
  • Mastic (ground) mixed with a little sugar
  • A splash of rose water
  • Qreishah (strained curd) or cream
  • 2 liters milk
  • 3 large tablespoons white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon rose water
  • 1 tablespoon orange blossom water
  • 1 tub clotted cream (qimeer)

Method

Follow the cooking sequence without leaving the page.

  1. Put the water and ground rice in a pot and stir until the mixture thickens.
  2. Then add the sugar and stir.
  3. When the mixture boils, add the cheese and stir until the cheese melts; then add ground mastic with 1 tablespoon sugar and a splash of rose water, and stir.
  4. Remove from the heat and pour the rice halva into a Pyrex dish or into serving glasses.
  5. Prepare the qreishah: put the milk on the heat until it boils.
  6. When it boils, reduce the heat and add the vinegar and sugar; wait a moment until the milk curdles, then turn off the heat.
  7. Pour the mixture into a fine sieve and strain it well.
  8. Add 1 can Qeimr (clotted cream), orange blossom water, and rose water and mix them together.
  9. Let the qreishah cool before using.
  10. When the qreishah has cooled, spread it over the rice halva.
