Rice Halva (Sweet Rice) with Qreishah

Ingredients

- 1 cup rice flour
- 2 cups water
- 1 cup sugar
- 500 g sweetened cheese or mozzarella
- Mastic (ground) mixed with a little sugar
- A splash of rose water
- Qreishah (strained curd) or cream
- 2 liters milk
- 3 large tablespoons white vinegar
- 2 tablespoons sugar
- 1 tablespoon rose water
- 1 tablespoon orange blossom water
- 1 tub clotted cream (qimeer)

Method
Follow the cooking sequence without leaving the page.
- Put the water and ground rice in a pot and stir until the mixture thickens.
- Then add the sugar and stir.
- When the mixture boils, add the cheese and stir until the cheese melts; then add ground mastic with 1 tablespoon sugar and a splash of rose water, and stir.
- Remove from the heat and pour the rice halva into a Pyrex dish or into serving glasses.
- Prepare the qreishah: put the milk on the heat until it boils.
- When it boils, reduce the heat and add the vinegar and sugar; wait a moment until the milk curdles, then turn off the heat.
- Pour the mixture into a fine sieve and strain it well.
- Add 1 can Qeimr (clotted cream), orange blossom water, and rose water and mix them together.
- Let the qreishah cool before using.
- When the qreishah has cooled, spread it over the rice halva.
