How to make easy, quick cheese halawa (halawet el-jibn)!

Ingredients

  • 1/2 cup water
  • 1/2 cup sugar
  • 1/2 cup fine semolina
  • 1 cup unsalted mozzarella cheese
  • Orange blossom water
  • Cream (qeshta) — homemade or store-bought *

Method

  1. Put the sugar and water on the heat until they begin to boil, then add the fine semolina and stir well…
  2. Add the cheese and stir well until the dough comes together into one mass…
  3. Add orange blossom water and stir for 2 minutes
    Timers: 2 min
  4. Meanwhile prepare the syrup (qater or shīrah) and put a little of it into the small mold used for petit fours or marsaban or any small molds used for sweets
  5. Take small pieces of the cheese halawa dough and place them in the mold, then top them with clotted cream or qaymar and garnish with whole or ground Halabi pistachios as desired
