Rice Halva (Halawat al-Ruzz)
Rice halva — one of the tastiest Arabic desserts made with cheese. Here is the authentic method. Serve syrup on the side for those who like it sweeter.
Rice halva — a very delicious dessert. It’s easy to make if you follow the steps below.
Ingredients
Start here, then move straight into the method.
- 1 cup Egyptian rice
- 1 cup sugar (or to taste)
- 500 g mozzarella cheese
- 2 tbsp rose water
- 2 tbsp orange blossom water
- A pinch of mastic ground with 1 tbsp sugar
- Crushed pistachios for garnish
- Lemon blossom (zahr el-laymoun) for garnish
- Syrup (qatir) to serve on the side

Method
Follow the cooking sequence without leaving the page.
- Soak the rice for half an hour, then drain it well.
- Cover it with water in a pot, place it on the heat, and boil it until cooked.
- When it is well cooked, let it cool slightly then grind it in a blender until it becomes a smooth, sticky mixture.
- Return it to the pot and cook over low to medium heat, add the sugar, and continue stirring until the sugar dissolves.
- When the sugar dissolves, add the grated cheese and stir until it melts.
- Finally, add the mastic, orange blossom water, and rose water, stir, and remove the rice halva immediately from the heat.
- Brush the serving dish with a little syrup before pouring in the rice halva... this prevents the halva from sticking to the dish.
- Garnish the rice halva with pistachios and orange blossom flowers and let it cool to room temperature before refrigerating and serving.
- Serve syrup on the side as desired.
