Ingredients

  • Lemon zest
  • 4 eggs
  • A small pinch of salt
  • 1 1/2 cups sugar
  • 1 teaspoon liquid vanilla
  • 1 cup milk
  • 3/4 cup vegetable oil
  • 2 teaspoons baking powder
  • 3 cups sifted flour
  • 1 cup blueberries

Method

  1. Place the lemon zest, eggs, salt, and vanilla in a mixer and beat well. Then add the sugar and beat thoroughly.
  2. Add the milk and oil and beat well. Then gradually add the sifted flour and beat again.
  3. Add the baking powder and beat, then add the cup of blueberries and fold the mixture gently.
  4. Pour the blueberry cake batter into a pan greased with oil or tahini.
  5. Place the pan in a preheated oven at 180°C (356°F) for about 50 minutes on the middle rack.
    Timers: 50 min
  6. Keep an eye on the cake while it bakes — it may need slightly less than 50 minutes depending on your oven.
  7. Test the cake with a small wooden skewer before removing it from the oven.
  8. Let it cool to room temperature and serve the blueberry cake.
