Ingredients

  • 3/4 cup walnuts
  • 1 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 1/2 cup brown sugar
  • A very small pinch of baking soda
  • 1 teaspoon ground cinnamon
  • A pinch of salt
  • 2 teaspoons water
  • Whites of 3 eggs
  • Divide the dough into two portions
  • Sprinkle the remaining amount of crumbled walnuts on a baking tray lined with parchment paper or greased with oil or butter
  • Repeat the same with the second portion of dough
  • Rearrange the walnut biscotti pieces on the tray over the parchment so that the biscotti pieces lie flat
  • Return the biscotti to the oven for an additional 15 minutes or until fully cooked and crispy
  • Remove them from the oven and serve, or store in an airtight container so they don't become hard

Method

Follow the cooking sequence without leaving the page.

  1. Place the walnuts in a small skillet with a pinch of flour and toast over heat for about 1 minute.

  2. Transfer the toasted walnuts to a food processor and pulse just once to break them — you want pieces, not a fine grind.
  3. After breaking the walnuts, divide them into two portions. Place the first portion in a deep bowl.
  4. Add the all-purpose flour, whole wheat flour, brown sugar, salt, cinnamon and baking soda to the walnuts and mix well.
  5. Gradually add the egg whites to the walnut mixture.
  6. Mix until you obtain a dough. If the egg whites aren't enough to bind the mixture, add the teaspoons of water one at a time. Add the first teaspoon and, if the mixture holds together as a single dough, stop and don’t add the second.
  7. Divide the formed dough into two portions.
  8. Sprinkle the remaining chopped walnuts over a baking sheet lined with parchment paper or greased with oil or butter.
  9. Spread the first portion of dough over the walnuts, shaping it into a rectangle.
  10. Repeat the same with the second portion of dough.
  11. Bake the two biscotti logs in a preheated oven at 170°C for 15 minutes.

  12. After the time is up, remove the walnut biscotti from the oven and cut each log lengthwise into slices.
  13. Arrange the biscotti slices flat on the baking sheet over the parchment paper so each piece lies flat.
  14. Return the biscotti to the oven for an additional 15 minutes, or until they are fully cooked and crisp.
    Timers: 15 min
  15. Remove from the oven and serve, or store them in an airtight container so they don’t become too hard.
