Ingredients
Start here, then move straight into the method.
- 1 kilo large okra pods
- 1 head garlic
- 2 lemons
- 1 tablespoon sweet red pepper paste or molasses
- Olive oil
Method
Follow the cooking sequence without leaving the page.
- Trim the tops of the okra pods, then wash them and let them drain.... It is best to leave them to dry on a towel or cloth on a clean surface overnight so they dry well
- If the pods are large, cut them, then fry them only halfway in plenty of oil over medium heat
- Remove the okra from the oil and leave it on paper towels or in a colander to get rid of the excess oil
- Crush the garlic and mix it with the lemon juice and pepper paste, then spread it over the okra in the serving dish and drizzle olive oil on top
- Serve okra with garlic and lemon with Arabic bread
