Recipe story

Pumpkin with tahini in an easy recipe... just like moutabal in the way it is prepared! It tastes so delicious. Try it for yourself and you will surely add this dish to your appetizer list.

Ingredients

  • 1 cup cooked chickpeas
  • 2 cups pumpkin, chopped and cooked
  • 2 cloves garlic
  • 1/4 cup lemon juice
  • Olive oil
  • 1/3 cup tahini

Method

  1. First, drain the chickpeas and pumpkin well after boiling, and let them cool completely.
  2. Start by mashing the chickpeas well, then add the pumpkin and mash it too.
  3. Once the chickpea and pumpkin mixture is smooth, add the garlic, lemon juice, and salt, then gradually add the tahini... You can also mix everything by hand without a machine, just like other moutabals (after mashing the garlic, of course).
  4. Add a little tahini if the mixture is too loose, or a little water if it is too thick... and mix until you get the texture of moutabal.
  5. Drizzle a little olive oil on top when serving.
  6. For more ways to make pumpkin, here is Pumpkin Soup
  7. We also recommend making Stuffed Pumpkin Kibbeh as well
