Ingredients

  • 3 tablespoons butter
  • 1 cup fine semolina
  • 3/4 cup milk
  • 1 cup sugar
  • 1 and 1/2 cups ground pistachios
  • 1 tablespoon rose water
  • At this point you get something like a soft dough. Add the Aleppo pistachios off the heat.

Method

  1. Place the butter in a pan over the heat with the semolina. Once the semolina has lightly toasted, add the milk. Stir the mixture for about 2 minutes until the ingredients are well combined and there are no lumps.

  2. Add the sugar and stir well until the sugar is completely dissolved.
  3. At this point, you will have a soft dough-like mixture. Add the Aleppo pistachios with the heat turned off.
  4. The pistachios should not be ground very finely. Add the rose water and mix well.
  5. Spread the madlouka dough you have obtained in a wide dish, add the cream on top, and decorate as desired.
