English fruit cake with dried fruit ... a very tasty homemade recipe. You can make a better English fruit cake at home than store-bought.

Ingredients

  • 5 eggs at room temperature
  • 200 grams butter at room temperature
  • 300 grams powdered sugar
  • 400 grams cake flour
  • 1 tablespoon baking powder
  • A pinch of salt
  • 1/2 tablespoon vanilla extract or vanilla powder
  • Dried fruit or raisins, or as desired

Method

  1. Beat the butter with the sugar, salt, and vanilla until creamy
  2. Add the eggs one at a time, making sure each egg is fully incorporated before adding the next, and continue until all 5 eggs are used
  3. Sift the flour and baking powder and add them over the English cake mixture, then beat for a few seconds
  4. Finally add the raisins or dried fruit after tossing them in flour, and stir with a wooden spoon until the mixture is uniform
  5. Pour the English fruit cake mixture into a buttered and floured pan or one lined with parchment paper
  6. Place the pan into a preheated oven at 180°C for about one hour, or according to your oven's strength
  7. Let the cake cool at room temperature before serving
