Method

- Grind the onion and parsley finely, then add them to the meat along with the spices, salt, and tomato paste. Knead everything well. It is best for the meat to be cold so it holds together well.
- Shape the kofta onto grilling skewers, wetting your hands with ice-cold water every so often to form the kofta on the skewer as long finger-shaped pieces.
- Place the kofta skewers in the refrigerator until grilling time.
- Grill the kofta in the oven or over charcoal without overcooking, so it stays juicy and does not dry out.
