Pan-fried green fava beans are one of those vegetarian recipes that only come around in fava bean season. They are delicious, and there are several ways to make them. Some prepare them as "3asoura," while others like to add coriander. Here is this easy and tasty method.
Ingredients

- About 600 grams green fava beans (with pods intact)
- 1/4 cup olive oil
- 1 onion
- 5 cloves garlic, crushed
- 1 bunch fresh coriander, finely chopped
- Salt, to taste
- To serve: lemon juice, optional
Method
Follow the cooking sequence without leaving the page.
- In a frying pan or pot over medium heat, sauté the crushed garlic and finely chopped onion in the olive oil until softened.
- Add the washed, drained, and chopped fava beans (after trimming the ends of the pods) and stir until the beans begin to soften.
- Add the coriander over the beans, along with a little water, just enough so the beans do not stick to the pan, and salt. Stir, then lower the heat.
- Cover the pot and let the green fava beans cook over low heat until fully tender, stirring occasionally.
- Serve immediately or at room temperature with a squeeze of lemon juice, if desired, and eat with bread.
