Charcoal-Grilled Chicken

Ingredients
Start here, then move straight into the method.
- One whole chicken, butterflied and not cut into pieces
- Marinade
- Red or white vinegar, depending on what is available, with red being better for chicken
- Two tablespoons yogurt
- Lemon juice
- Salt
- Chicken seasoning
- Paprika
- Cinnamon
- Rosemary
- Two basil leaves
- Crushed garlic

Method
Follow the cooking sequence without leaving the page.
- Mix all the marinade ingredients and marinate the chicken in the refrigerator for as long as possible (or at least 2 hours).. can be a whole night or a full dayTimers: 120 min
- Place the chicken on the grilling rack and close it tightly
- Place the grilling rack over the charcoal and flip it to grill both sides
- When the chicken begins to cook and develops color, brush it with a marinade similar to the one it was soaked in to prevent it from drying out and to intensify the marinade flavor; be careful not to baste it before the chicken has started cooking because the added moisture can extinguish the charcoal and delay cooking
