Charcoal-Grilled Chicken

Ingredients

  • One whole chicken, butterflied and not cut into pieces
  • Marinade
  • Red or white vinegar, depending on what is available, with red being better for chicken
  • Two tablespoons yogurt
  • Lemon juice
  • Salt
  • Chicken seasoning
  • Paprika
  • Cinnamon
  • Rosemary
  • Two basil leaves
  • Crushed garlic

Method

Follow the cooking sequence without leaving the page.

  1. Mix all the marinade ingredients and marinate the chicken in the refrigerator for as long as possible (or at least 2 hours).. can be a whole night or a full day
    Timers: 120 min
  2. Place the chicken on the grilling rack and close it tightly
  3. Place the grilling rack over the charcoal and flip it to grill both sides
  4. When the chicken begins to cook and develops color, brush it with a marinade similar to the one it was soaked in to prevent it from drying out and to intensify the marinade flavor; be careful not to baste it before the chicken has started cooking because the added moisture can extinguish the charcoal and delay cooking
