Fatteh with vegetables — an inventive way to serve traditional fatteh.

Ingredients

  • Plain yogurt (raib) — as needed
  • 1 cup chickpeas (soaked overnight and boiled, or canned chickpeas)
  • 1 cup corn
  • 1 cup chopped tomatoes
  • 1/2 cup chopped parsley
  • Fried bread, torn into pieces
  • 1 tbsp tahini
  • Salt
  • 1 small garlic clove

Method

  1. In a large bowl, place half of the vegetables
  2. Place the fried bread over the vegetables; arrange it evenly as the second layer
  3. Add salt, the crushed garlic clove, and tahini to the yogurt and whisk well, then pour the yogurt mixture evenly over the bread
  4. Garnish the dish with the remaining vegetables and bread
