Brazilian sambousek with different fillings — an important recipe to learn for serving the tastiest appetizers.

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup oil (or 5 tablespoons)
  • 1/4 cup white vinegar (or 5 tablespoons)
  • 3/4 cup lukewarm water
  • Salt to taste
  • Beef filling:
  • Ground beef
  • Tomato, diced
  • Onion, finely chopped
  • Green pepper, chopped
  • 1 teaspoon tomato paste
  • Black pepper
  • Salt
  • 1 teaspoon capers or chopped pickles (optional)
  • Oil (for cooking)
  • Chicken filling:
  • Cooked, shredded chicken
  • Chopped green olives
  • 1 tablespoon capers or chopped pickles (optional)
  • 1/2 teaspoon ground or grated ginger
  • Chopped parsley
  • Note:
  • You can freeze them before frying and fry them when needed.
  • You can also fill them with white cheese and mozzarella.

Method

  1. Put the flour in a bowl. Add the oil and mix with a fork or a mixer until the flour absorbs the oil.
  2. Add the vinegar and salt, mix, then add the lukewarm water and knead until you have a smooth, soft dough.
  3. Cover well and place in the fridge or set aside for 1 hour or more.
    Timers: 60 min
  4. While the dough rests, prepare the fillings. For the beef filling: put the ground beef in a skillet over heat and cook until the color changes and any released juices evaporate.
  5. Add the chopped onion and oil, stir until the onion softens.
  6. Add the tomato and green pepper and continue cooking until tender.
  7. Add salt, pepper and the remaining ingredients, mix well until combined, then remove the filling from the heat and let it cool.
  8. Prepare the chicken filling: heat oil in a skillet, add the onion and cook until softened, then add the tomato and stir.
  9. Add the shredded chicken, mix well, then add the remaining ingredients and cook until combined and heated through.
  10. Set the fillings aside to cool.
  11. After the resting time, dust a clean surface with flour and roll the dough into a thin sheet.
  12. Cut the sheet into circles of the desired size and place a portion of the filling you choose in the center of each circle.
  13. Fold each circle into a half-moon, or place two circles together if you prefer. Seal the edges by pressing with your fingers or crimping with a fork.
  14. Fry the sambousek filled with beef or chicken in hot, deep oil and serve hot.
