Method
Follow the cooking sequence without leaving the page.
- Soak the chicken thighs after washing and patting them dry; marinate them in the listed marinade ingredients to soak the chicken, and leave them to soak for a full night.
- Place the chicken in a baking tray and put it in the oven on the middle rack until cooked; you can brown the top if desired.
- Prepare the rice: fry a chopped onion in a little oil.
- Add finely chopped fresh tomatoes after the onion has softened.
- When the tomatoes have softened too, put them in an electric blender and blend until they become like a sauce.
- Return the mixture to the pot, then add the chicken broth (it should be available from previously simmering the chicken with aromatics) and stir; then add the kabsa spice and salt — when they boil, add the rice.
- Let the broth boil again with the rice before reducing the heat.
- Cover the rice and leave it for about 20 minutes over low heat until cooked.Timers: 20 min
