Ingredients
Start here, then move straight into the method.
- 3 heads garlic
- 1 tablespoon lemon salt, or citric acid
- 1 teaspoon salt
- 1 cup vegetable oil, less or more as needed
Method
Follow the cooking sequence without leaving the page.
- In a food processor or the special cocktail/blender jug, place the peeled garlic with the salt and blend, turning the machine off every now and then to stir the garlic and scrape down any bits thrown to the sides of the jug.
- Add the lemon salt and continue blending or whisking.
- Add the oil in a thin stream until you reach the desired creamy consistency, then stop adding oil.
- Store this sauce, or toum, in the refrigerator for a month or more after sealing it well with plastic wrap or placing it in a tightly closed jar.
