Toum is one of the sauces served with chicken. We have the easiest way to make it without eggs, starch, or potatoes, and the result is excellent in flavor. It can be kept in the refrigerator for a full month.

In a food processor or the special cocktail/blender jug, place the peeled garlic with the salt and blend, turning the machine off every now and then to stir the garlic and scrape down any bits thrown to the sides of the jug.
