Coconut Macaroons ... a wonderfully tasty dessert

Ingredients

  • 2 egg whites
  • 1 1/4 cups shredded coconut
  • 3/4 cup sugar
  • a pinch of salt
  • 1 tablespoon flour
  • maraschino cherries for garnish
  • Get the recipe for al-'awamat from Rasmiyah as well.

Method

  1. Put the egg whites in the mixer and whisk well until you get a white, creamy mixture
  2. Gradually add the sugar and continue whisking until all is added, then whisk for one minute
  3. Add a pinch of salt and one tablespoon of flour and mix using a spatula or spoon
  4. Gradually add the coconut and mix with the spatula or spoon until the mixture is uniform
  5. Place baking paper on the tray and form small balls using a spoon or your hand, leaving space between pieces because they will expand during baking
  6. Decorate with cherries; this step is optional
  7. Place the tray on the middle oven rack at 180°C for 20 minutes or according to your oven, and lightly brown the top
    Timers: 20 min
  8. Remove from the oven and let cool before transferring to a plate; if pieces stick to the paper, wipe the paper from the underside with a kitchen paper towel dampened with water and you can immediately remove the discs
