Coconut Macaroons ... a wonderfully tasty dessert
Ingredients
- 2 egg whites
- 1 1/4 cups shredded coconut
- 3/4 cup sugar
- a pinch of salt
- 1 tablespoon flour
- maraschino cherries for garnish
- Get the recipe for al-'awamat from Rasmiyah as well.
Method
- Put the egg whites in the mixer and whisk well until you get a white, creamy mixture
- Gradually add the sugar and continue whisking until all is added, then whisk for one minute
- Add a pinch of salt and one tablespoon of flour and mix using a spatula or spoon
- Gradually add the coconut and mix with the spatula or spoon until the mixture is uniform
- Place baking paper on the tray and form small balls using a spoon or your hand, leaving space between pieces because they will expand during baking
- Decorate with cherries; this step is optional
- Place the tray on the middle oven rack at 180°C for 20 minutes or according to your oven, and lightly brown the topTimers: 20 min
- Remove from the oven and let cool before transferring to a plate; if pieces stick to the paper, wipe the paper from the underside with a kitchen paper towel dampened with water and you can immediately remove the discs
