Coconut discs are all you need for a tidy hospitality spread or a light snack for you and the kids... besides coconut being nutritious. Here are the details of this super-easy recipe

Ingredients

  • 4 egg whites (separated from yolks)
  • 1 teaspoon vanilla
  • 1 teaspoon lemon zest
  • 1 cup sugar
  • 1 level tablespoon (tbsp) flour
  • 1 teaspoon baking powder
  • 2 1/2 cups shredded coconut
  • melted butter or oil for shaping the dough

Method

  1. With an electric mixer, whip the egg whites (without yolks) with vanilla and lemon zest until the mixture doubles and becomes like whipped cream.
  2. Add the sugar and continue whipping until it dissolves.
  3. Add the flour and baking powder and continue whipping until combined.
  4. Stir in the desiccated coconut with a spoon until you have a soft batter.
  5. Place the mixture in a nonstick pan over very low heat and stir continuously for about 10 minutes only.

  6. Transfer them to a glass bowl, cover with cling film and a clean towel, and let the dough rest for about an hour.
  7. After the time has passed, form the mixture into balls, then arrange them or press them lightly with the palm of your hand to shape them.
  8. Place them on parchment paper on a baking tray.
  9. Bake in a preheated oven at 170°C on the bottom rack for about 12 minutes, watching closely.

  10. When the edges begin to brown, turn on the top heat for 3 minutes so they brown on top, monitoring them.
