  • 2 and 1/2 cups flour
  • 2 tablespoons milk powder
  • 1 teaspoon baking powder
  • 1 tablespoon instant yeast
  • 1 cup sugar
  • 1 tablespoon anise seeds, whole or ground
  • A pinch of salt
  • A pinch of vanilla
  • 1/2 cup ghee
  • 1/2 cup vegetable oil
  • Warm water, as needed for the dough
  • Date filling
  • Sesame seeds for garnish
  • Filling
  • Ground dates
  • 1 tablespoon rose water
  • 1 tablespoon orange blossom water
  • A pinch of nutmeg
  • A pinch of mahlab

Method

Follow the cooking sequence without leaving the page.

  1. Mix all the ingredients together and knead well. Then start stuffing and shaping as desired, into rounds or fingers.

  3. Roll out the dough into a rectangle and place the filling lengthwise along one edge of the dough. Fold the dough over the filling and trim off the excess dough. You will have a long rope of date-filled dough; cut it as desired.
  4. Dip the date fingers or round cookies in sesame seeds and bake in a preheated oven until golden, about 10 minutes.
