Ingredients

  • 1 kilo apricots suitable for jam
  • 1 kilo sugar
  • Lemon juice

Method

  1. Coarsely grind the apricots using a machine just to open up the pieces, and be sure to remove and discard the pits.
  2. Soak the apricots with the sugar overnight.
  3. The next day, put the apricots with the liquid that has come out into a pot.
  4. Place the pot on the heat and add a little lemon juice.
  5. Remove and discard the white foam whenever it appears on the surface.
  6. When the mixture boils, reduce the heat and let the pot simmer over medium heat, stirring occasionally until the jam thickens, the apricots are cooked, and the liquid becomes syrupy.
  7. Store the apricot jam in two ways... you can let it cool completely, then distribute it into sterilized glass jars, seal them well, and keep them in the refrigerator.
  8. The second and preferred method is to heat the glass jars in the oven until very hot, then pour the jam into the jars immediately after removing it from the heat while it is still hot and seal the jars... they can be stored outside the refrigerator.
