- 2 cups sifted flour
- 4 eggs
- 1 cup sugar
- 1/2 cup oil
- 1 cup pitted dates, ground, soaked in 1 cup milk or 1 cup hot water, mashed with a fork and set aside
- a dash of vanilla
- a pinch of salt
- 1 tablespoon white vinegar
- 1/2 can cream - qimeer
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- Toffee sauce:
Method
- Beat the eggs with the vinegar and vanilla well, then add the sugar and continue beating until you obtain a dense foam.
- Add the oil and the soaked dates and continue beating... reduce the mixer speed and add the sifted flour with the baking powder, cinnamon, cardamom and a pinch of salt... add these dry ingredients slowly and gradually in batches....
- Pour the batter into a pan greased with oil and dusted with flour and place the cake batter in the preheated oven at 180°C...
- Bake the cake on the middle rack for about 45 minutes or according to your oven's strength.Timers: 45 min
- Place 1 cup sugar on the heat without any additions until it turns golden like caramel.
- Add a piece of butter and stir quickly, then add a can of plain cream while continuing to stir.
- When the cake has cooled, pour the toffee sauce over the cake and garnish with dates, walnuts and pistachios
