Meat kabsa with vegetables is a special and practical dish that suits the table at any time, especially for celebrations. It is a very delicious and rich meal.

Ingredients

  • Kabsa rice:
  • 2 cups basmati rice (washed and soaked)
  • 1 carrot, chopped
  • 1 cup peas, frozen or fresh
  • 1 hot pepper, chopped
  • 1 green sweet pepper, chopped
  • 1 cup thin green beans - optional
  • 1 onion, sliced
  • 2 tablespoons ghee
  • 3 1/2 cups meat cooking broth
  • 1/2 teaspoon salt
  • 1 tablespoon kabsa spice (ground)
  • 1/2 cup toasted nuts, as desired - for garnish
  • Meat:
  • 1 kilogram lamb pieces
  • 1 tablespoon kabsa spice (whole)
  • 1 onion, finely chopped
  • 1 tablespoon ghee
  • 1 teaspoon salt
  • 1 cardamom pod and 1 cinnamon stick

Method

  1. We start by preparing the meat... Put the ghee in a pot over the heat (or a pressure cooker) and stir the meat pieces until they are browned on all sides.
  2. Add the salt, onion, cardamom pod, cinnamon stick, and whole kabsa spices, and stir for 3 more minutes.
  3. Cover the meat with water and close the pressure cooker for 40 minutes until the meat is cooked through. If a pressure cooker is not available, leave the regular pot covered over low heat for the time needed until the meat is fully tender.

  4. Meanwhile, prepare the kabsa rice. Heat the ghee in a pot over medium heat.
  5. Add the sliced onion and stir for 3 minutes until softened.

  6. Add the chopped hot pepper, green pepper, carrot, peas, and green beans, and stir for 15 minutes, stirring constantly until the vegetables soften.
    Timers: 15 min
  7. Take out a little of the sautéed vegetables and set them aside for garnish, then add the salt, kabsa spices, and rice to the pot and stir gently so the rice does not break. Stir for 5 minutes.
    Timers: 5 min
  8. Add the meat cooking broth (the amount the rice needs) and stir, then lower the heat, cover the pot, and leave it for 25 minutes until the rice is cooked and has absorbed the broth.
    Timers: 25 min
  9. Serve the kabsa rice in a serving dish, arrange the meat pieces on top, and garnish with the vegetables set aside and the toasted nuts.
  10. Serve hot with daghous sauce or salad, as desired.
