Pumpkin kibbeh without flour .. a distinctive pumpkin kibbeh tray you'll be licking your fingers for
Ingredients
- 2 cups fine white bulgur
- 1 kg pumpkin
- 2 cups chopped spinach
- 200 grams walnuts
- 4 large onions, sliced
- 1 tablespoon ground sumac
- 1 teaspoon ground cumin
- a pinch of black pepper
- a pinch of ground hot pepper
- sour pomegranate seeds (optional)
- salt
- vegetable oil
Method
- Cut the pumpkin after peeling it and cook it sautéed or steamed
- Soak the bulgur with the hot, cooked pumpkin pieces for one hour
- After the time has passed.. sprinkle salt and spices over them and rub with your hands to obtain a dough.. do not add water
- Meanwhile, in a frying pan sauté the sliced onions in oil until soft, then add the walnuts and stir
- Add the spinach with a pinch of black pepper and sauté
- When the water from the spinach evaporates turn off the heat and add sumac and sour pomegranate seeds and mix
- Prepare the baking tray.. spread vegetable oil over the entire tray
- Divide the pumpkin dough into two portions then spread the first layer... making it thin
- Distribute the filling evenly then spread the second layer... dip your hands lightly in water to help spread the dough without cracking
- Cut it as desired and drizzle vegetable oil over it then put it in the oven at 200°C to bake
- Brown the top of the pumpkin kibbeh then serve it hot
