How to Make Maamoul Mad with Ashta

- 1 1/2 cups semolina
- 1 1/2 cups farina flour
- 1 cup ghee
- 1 tablespoon powdered milk
- 2 tablespoons orange blossom water
- 2 tablespoons rose water
- 1/2 cup sugar
- 1 tablespoon mahlab
- 1 tablespoon yeast

Method
- Mix the semolina, farikha flour, sugar, milk and mahlab well, then add the ghee and mix well. Let the mixture rest for one hour.
- Dissolve the yeast in a spoon of warm water, rub the mixture well without kneading, then add the orange blossom and rose water.
- Divide the dough into two parts, roll out the first layer and place the prepared cold ashta (clotted cream) or qeemar on top.
- Roll out the third layer using plastic wrap to obtain a thin layer to the size you want.
- Place the maamoul mad tray with ashta in a preheated oven for about 25 minutes or until browned.Timers: 25 min
- Method to make ashta:
- Heat the liquid milk on the stove until it slightly boils.
- Add a tablespoon of white vinegar until it curdles.
- Place the mixture in a sieve. Set aside a cup of water with two tablespoons of powdered milk, one tablespoon of flour and a tablespoon of sugar to taste.
- Stir them well and when the mixture thickens add a tablespoon of orange blossom water and the strained milk. Stir well and leave on low heat for a few minutes.
