Ingredients:

1 1/2 cups semolina

1 1/2 cups farina flour

1 cup ghee

1 tablespoon powdered milk

2 tablespoons orange blossom water

2 tablespoons rose water

1/2 cup sugar

1 tablespoon mahlab

1 tablespoon yeast

Method:

Mix the semolina, farina flour, sugar, powdered milk, and mahlab well, then add the ghee and mix again until combined. Let the mixture rest for 1 hour.

Dissolve the yeast in 1 tablespoon of warm water and rub it into the mixture well without kneading, then add the orange blossom water and rose water...

Divide the dough into two parts. Roll out the first layer and spread the ashta or ready-made, chilled kaymak on top.

Roll out the third layer using nylon until you get a thin sheet in the size you want.

Place the tray of maamoul mad with ashta in a preheated oven for about 25 minutes, or until golden brown....

How to Make the Ashta:

Put the liquid milk on the heat until it comes to a gentle boil.

Add 1 tablespoon white vinegar so it curdles.

Pour the mixture into a strainer. In a separate bowl, combine 1 cup water with 2 tablespoons powdered milk, 1 tablespoon flour, and 1 tablespoon sugar, as desired.

Stir well, and when the mixture thickens, add 1 tablespoon rose water and the strained milk. Stir well and leave it for a few minutes over low heat...
