Method

  1. Cut the zucchini into small cubes, then sauté them in a little oil until they soften.
  2. Add the finely chopped onion and sauté until the onion softens as well.
  3. Add the chopped tomatoes, increase the salt and hot pepper, stir, then cover and leave them on low heat until cooked.
  4. Finally, adjust the seasoning and cumin, and turn off the heat.
  5. Serve the zucchini maqlouba with tomato to be eaten cold or hot with Arabic bread.
