Yellow lentil soup — one of the most requested soups and very easy to make.
Ingredients
- 1 cup yellow lentils
- 3 cups water
- 1 carrot
- 1 potato
- 1 zucchini
- 1 grated onion
- a small handful (or pinch) of short-grain Egyptian rice
- 1 tablespoon butter
- salt to taste
- a pinch of ground cumin
- juice of half a lemon

Method
- Rinse the lentils well, then put them in a pot over the heat with the water, the grated onion, all the chopped vegetables and the rice.
- When everything boils and the ingredients are fully cooked, let them cool slightly then blend until very smooth.
- Return the blended mixture to the pot and add water as needed to reach the desired soup consistency.
- Add the butter, salt and cumin and bring to a boil.
- As soon as it boils, add the lemon juice, stir and remove from the heat.
- Serve the yellow lentil soup immediately. Some like extra lemon or toasted bread on the side — adjust to your taste.
