Yellow lentil soup — one of the most requested soups and very easy to make.

Ingredients

  • 1 cup yellow lentils
  • 3 cups water
  • 1 carrot
  • 1 potato
  • 1 zucchini
  • 1 grated onion
  • a small handful (or pinch) of short-grain Egyptian rice
  • 1 tablespoon butter
  • salt to taste
  • a pinch of ground cumin
  • juice of half a lemon

Method

  1. Rinse the lentils well, then put them in a pot over the heat with the water, the grated onion, all the chopped vegetables and the rice.
  2. When everything boils and the ingredients are fully cooked, let them cool slightly then blend until very smooth.
  3. Return the blended mixture to the pot and add water as needed to reach the desired soup consistency.
  4. Add the butter, salt and cumin and bring to a boil.
  5. As soon as it boils, add the lemon juice, stir and remove from the heat.
  6. Serve the yellow lentil soup immediately. Some like extra lemon or toasted bread on the side — adjust to your taste.
