Yellow lentil soup — a tasty homemade recipe
Ingredients
- 500 g yellow split lentils
- 1 small coffee cup Egyptian rice (about 60–80 g)
- 2 onions
- Cumin (to taste)
- Salt (to taste)
- Parsley (chopped)

Method
- Rinse the lentils with the rice and leave them to drain.
- Sauté the finely chopped onion in a little oil until softened.
- Add the lentils and rice and stir.
- Cover the lentils and rice with hot water... bring to a boil over high heat, then reduce to low heat to cook through.
- Add hot water gradually to achieve a loose soup consistency.
- Add a pinch of ground cumin, a sprinkle of chopped parsley, and salt to taste, and stir.
- Let the yellow lentil soup simmer for just a few minutes, then remove from the heat and serve.
- You can add a little lemon juice to the soup or serve it on the side to add at serving, according to preference.
