Recipe story

Wheat with yogurt, also called "labilniyye"... We all know wheat with milk, so let us introduce you to wheat with yogurt!

Ingredients

  • 2 cups wheat
  • 1 cup chickpeas
  • 2 kilos yogurt

Method

  1. Soak the chickpeas and the wheat, each in a separate bowl, overnight.
  2. The next day, cover the chickpeas with water in a separate pot, and do the same with the wheat, then boil until tender.
  3. When the water has dried out from the wheat and the grains have opened up, we know the wheat is cooked. If there is plenty of water and the wheat cooks before it dries out, drain it. Drain the chickpeas and add them to the wheat.
  4. Add two cups of water to the yogurt, whisk, and place it in a pot over the heat, stirring constantly.
  5. Do not let the yogurt boil. As soon as it is hot, turn off the heat.
  6. Pour the hot yogurt over the wheat and chickpeas, stir, and let it cool at room temperature. Then refrigerate until well chilled before serving.
  7. This easy, cold summer recipe for wheat with yogurt is from a friend of the Shaw Tabkhin Today site.
