Turkish semolina dessert made with fine semolina and syrup — an easy Turkish recipe we recommend you try.
Ingredients
- 3 eggs
- 1/2 cup yogurt
- 1/2 cup oil
- Zest of one lemon
- 2 teaspoons baking powder
- 2 1/2 cups fine semolina
- 2 cups all-purpose flour
- Syrup (qatir) or slightly thick simple syrup, prepared ahead
- Crushed pistachios for garnish
Method
- Whisk the eggs with the yogurt, oil, lemon zest, and baking powder by hand until the mixture is smooth.
- Add the semolina and mix with a spoon so the semolina absorbs the liquid.
- Then add the flour and knead by hand until you have a cohesive dough.
- Cover with plastic wrap and a clean towel and let rest for 10 minutes.Timers: 10 min
- After resting, divide into large pieces and roll each piece into a ball.
- On a clean surface, sprinkle a little semolina and flatten each dough ball lengthwise on the semolina; sprinkle a little semolina on top as well so the dough is coated.
- Cut into small pieces with a knife and place them on a baking tray lined with parchment paper.
- Bake in a preheated oven at 180°C (350°F) for about 35 minutes, using top and bottom heat.Timers: 35 min
- When lightly browned, remove from the oven and pour the syrup over them.
- Let them soak in the syrup for 10 minutes, then remove them from the syrup.Timers: 10 min
- Arrange on a serving plate and garnish with crushed pistachios.
